Top 5 Healthy Pancake Recipes
Ah Shrove Tuesday has come around again, so we thought we’d round-up some of our favourite healthy pancake recipes from the talented Froothie Ambassadors to give you a spot of inspiration this week. Obviously it’d be ridiculous to keep pancakes to one day of the year, so you might want to bookmark this post to come back to just because you’re in a pancake kinda mood. Funnily enough my kids are in that kinda mood most weekends!
1. Matcha Cocoa Pancake Stack
Get a load of this gluten free, low oil, sugar and dairy free stack of beauties from Bunny Kitchen! They’re healthy enough for breakfast and packed with fibre to keep the snack cravings at bay. However they’re also decadent enough for dessert, topped with strawberries and coconut cream or vegan ice cream!
2. Banana Pancakes with Ricotta & Chocolate Sauce
These tempting pancakes from Tin & Thyme are made with gluten free buckwheat flour and sweetened with yogurt. She’s totally luxed them up with an indulgent dark chocolate sauce, but of course you could keep things light and just have them piled high with fresh fruit.
3. Coconut & Oatmeal Pancakes
Oh yes, we had to have a sexy pancake pouring shot… and many thanks to Nazima over at Franglais Kitchen for obliging us with her excellent rendition! I think you’ll agree her pancakes made from coconut flour and oatmeal are outrageously nutritious, but manage to look exceedingly tempting at the same time.
4. Oat, Almond & Banana Free From Pancakes with Frozen Berry Compote
We are LOVING these pancakes from Easy Peasy Foodie! They look totally decadent, but are actually packed full of fruit, nuts and oats and only 1 tablespoon of maple syrup per person. What’s more they are gluten, dairy, refined sugar and egg free too!
5. Spiced Lentil Pancake Wraps
And finally, who says all pancakes must be sweet?! I’m more of a savoury girl myself, so I’m very much loving Tin & Thyme’s Warm pancake wraps which make a good lunch or dinner time change from tortilla wraps, especially when filled with rocket, spiced lentils, tomato salsa and avocado. Delish!
